- 150 gr butter
- 250 gr potato flour
- 1/2 sachet baking powder
- 10 drops Stevia
- 1/2 cup goat milk
- 4 eggs, separated
- 3 tablespoons citrus blossom water (available at natural food stores)
Preheat oven to 180°C.
Melt butter in deep bowl and add sweetener.
Add flour and baking powder and mix.
Add yolks and mix.
Add citrus blossom water and milk and mix.
In a separate bowl, whip egg whites to stiff peaks and fold gently into batter.
Pour batter into greased cake pan and bake for 45 minutes.
Let cool, slice and serve.
