Muffin time!! We know that you will enjoy this Sugar free Muffin Recipe:
- 1 cup rice flour
- 1/2 cup potato flour
- 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- 1/3 cup sugar substitute
- 1 teaspoon xanthan gum
- 1 teaspoon baking enhancer or guar gum
- 2 eggs
- 250 ml sour cream or 1 cup yoghurt
- 100 gr butter, melted
- 1 tablespoon silan (date syrup)
- Optional: Add cranberries, nuts, sugar-free blackberries or raisins
Preheat oven to 180°C.
In a mixer bowl, mix together all dry ingredients.
In a separate bowl, whisk together eggs, cream, silan and butter.
Add to dry mixture, stir and add cranberries.
Pour batter into muffin pan and bake for about 30 minutes.
Cool and serve.
