Lentils and Shiitake Mushroom Soup24 January, 2019
- 1 can water-packed tuna
- 2 leaves romaine lettuce, coarsely chopped
- 2 leaves Chinese cabbage, coarsely chopped
- 10 cherry tomatoes, halved
- 1 hard-boiled egg, coarsely chopped
- 5-6 sprigs coriander or parsley (or both), minced
- 2-3 sprigs dill, minced
- 1 cucumber, diced
- 2 tablespoons olive oil
- 1 tablespoon flax oil
- Juice from half a lemon (or more)
- 1 anchovy
- Salt to taste
- Strain tuna and crumble into a bowl.
- Add remaining all vegetables and hard-boiled egg and mix well.
- Add oils, lemon juice, and anchovy.
- May be served on a bed of lettuce.
