Lentils and Shiitake Mushroom Soup

INGREDIENTS

  • 1 can water-packed tuna
  • 2 leaves romaine lettuce, coarsely chopped
  • 2 leaves Chinese cabbage, coarsely chopped
  • 10 cherry tomatoes, halved
  • 1 hard-boiled egg, coarsely chopped
  • 5-6 sprigs coriander or parsley (or both), minced
  • 2-3 sprigs dill, minced
  • 1 cucumber, diced
  • 2 tablespoons olive oil
  • 1 tablespoon flax oil
  • Juice from half a lemon (or more)
  • 1 anchovy
  • Salt to taste

PREPARATION

  1. Strain tuna and crumble into a bowl.
  2. Add remaining all vegetables and hard-boiled egg and mix well.
  3. Add oils, lemon juice, and anchovy.
  4. May be served on a bed of lettuce.
