Quinoa – Basic Recipe

INGREDIENTS

  • 1 onion, finely chopped (optional)
  • 1 tablespoon olive oil
  • 1 cup quinoa
  • 1 1/2 cups water
  • 1 1/2 teaspoon salt

PREPARATION

  1. Heat oil in deep pot and add onion.
  2. Sauté for about 4 minutes and add quinoa.
  3. Cook for an additional 4 minutes, add salt and water, and bring to a boil.
  4. Lower heat, cover and simmer for about 15 minutes.
  5. Remove from heat and let sit, covered, for an additional 10 minutes until liquid is absorbed.
