- 1 onion, finely chopped (optional)
- 1 tablespoon olive oil
- 1 cup quinoa
- 1 1/2 cups water
- 1 1/2 teaspoon salt
- Heat oil in deep pot and add onion.
- Sauté for about 4 minutes and add quinoa.
- Cook for an additional 4 minutes, add salt and water, and bring to a boil.
- Lower heat, cover and simmer for about 15 minutes.
- Remove from heat and let sit, covered, for an additional 10 minutes until liquid is absorbed.
