INGREDIENTS
- 2 cups quinoa, cooked - See recipe here!
- 1 cup chickpeas, cooked
- 1 1/2 cup coriander or parsley, minced
- 1 1/2 cup mint leaves, minced
- 1 large onion, finely chopped
- 2 garlic cloves, crushed
- 1 1/2 cup lemon juice
- 2 tomatoes, diced
- 2 tablespoons olive oil
- Salt and pepper
PREPARATION
- Mix all of the ingredients in a large bowl.
- Season to taste.
