INGREDIENTS

  • 2 cups quinoa, cooked - See recipe here!
  • 1 cup chickpeas, cooked
  • 1 1/2 cup coriander or parsley, minced
  • 1 1/2 cup mint leaves, minced
  • 1 large onion, finely chopped
  • 2 garlic cloves, crushed
  • 1 1/2 cup lemon juice
  • 2 tomatoes, diced
  • 2 tablespoons olive oil
  • Salt and pepper

PREPARATION

  1. Mix all of the ingredients in a large bowl.
  2. Season to taste.
