INGREDIENTS
- 1 cup quinoa, cooked - See recipe here!
- 2 tomatoes, diced
- 2 cucumbers, diced
- 1/2 purple onion, finely chopped
- 1/2 cup parsley, minced
- 1/2 cup coriander, minced
- 1/4 cup dill, minced
- 1 tablespoon olive oil
- Juice from half a lemon
- Salt and pepper
- A handful of walnuts (not toasted)
PREPARATION
- In a large bowl, mix together all ingredients and add the cooked quinoa.
- Taste and adjust seasoning if needed.
