- 1 cup quinoa, cooked - See recipe here!
- 15 cherry tomatoes, halved
- 1/2 cup parsley, minced
- Handful of pinenuts
- 15 green olives, pitted and halved
- 4 sprigs thyme, leaves only
- 1 tablespoon olive oil
- Salt and pepper
- Mix together all ingredients in large bowl.
- Seasons with salt and pepper, mix well and serve.
