INGREDIENTS

  • 4 tablespoons olive oil
  • 2 red onions, chopped
  • 1/2 kg dry peas
  • Several drops of stevia or other sweeteners
  • 3 carrots, finely grated
  • 2 liters water (or vegetable stock)
  • Salt
  • Parmesan cheese as garnish

PREPARATION

  1. Heat olive oil in a medium-size pot and sauté onions till golden.
  2. Add peas, carrots, and water. Bring to a boil and add sweetener and salt.
  3. Simmer for about an hour and a half, until peas are soft.
  4. Serve hot.
