INGREDIENTS
- 1 cup black lentils
- 1/2 cup parsley, minced
- 1/2 cup coriander, minced
- Jest from one lemon
- 3 lemon slices, chopped
- Juice from 3 lemons
- 1 tablespoon olive oil
- Salt and pepper
PREPARATION
- Add lentils to a pot of cold water and bring to a boil.
- Lower heat, and simmer until soft but not overcooked, about 17 minutes.
- Strain and set aside to cool.
- While still lukewarm, mix in all remaining ingredients and serve.
