  • 1 cup black lentils
  • 1/2 cup parsley, minced
  • 1/2 cup coriander, minced
  • Jest from one lemon
  • 3 lemon slices, chopped
  • Juice from 3 lemons
  • 1 tablespoon olive oil
  • Salt and pepper


  1. Add lentils to a pot of cold water and bring to a boil.
  2. Lower heat, and simmer until soft but not overcooked, about 17 minutes.
  3. Strain and set aside to cool.
  4. While still lukewarm, mix in all remaining ingredients and serve.
